Vegan Fluffy Banana Pancakes

 

The weekend calls for pancakes!

Whats a better way to wake up on Sunday morning to the smell of freshly made banana pancakes! These are the fluffiest and tastiest banana pancakes I have ever made, whilst still being healthy! You can whip them up in only 10 min and decorate them with whatever you like. I love them simple with slices of fresh banana, crushed pecans for a little crunch and a drizzle of maple syrup – yum!

 

Ingredients

  • 1 large banana
  • 2 tbsp agave syrup
  • 150 grams wheat flour
  • 170 ml almond milk
  • 1 tbsp coconut oil + extra for frying
  • 1 tsp cinnamon
  • 1 tsp vanilla powder
  • 1/2 tbsp baking powder
  • Pinch of salt

Toppings:

  • Maple syrup
  • Pecans
  • Sliced banana

 

Method

  1. In a large bowl mix together the flour, cinnamon, vanilla powder, baking powder and salt.
  2. In a separate small bowl mash the banana and coconut oil together.
  3. Pour the smooth banana mixture into the large bowl and mix with the dry ingredients.
  4. Then add the agave syrup and almond milk and mix well until a smooth and thick mixture forms.
  5. Heat up a nonstick pan with a little coconut oil and pour in some of your pancake batter to form your first pancake! Fry them on each side until golden brown and make sure they had enough time to cook all the way through.
  6. Once they are ready serve your pancakes with some crushed pecans and sliced bananas and finish off by drizzling over some maple syrup!

Green Coconut Smoothie

This smoothie is perfect for a quick breakfast or if you need a little pick up throughout the day! It’s extremely refreshing and definitely sweet for a green smoothie. I love making a big jug of it especially in the summer! It’s simple and you don’t need many ingredients to make something healthy and delicious!

 

 

Ingredients

 

Makes one big cup 

  • 1 handful of Spinach
  • 1 ripe banana
  • 2 soft dates
  • 2/3 cup Coconut water
  • 1/3 lemon
  • teaspoon hemp seeds

 

Method

 

  1. Simply place all ingredients in a blender and blend until smooth.

Then, enjoy!

Healthy Honey Puffs

 

Honey Puffs is something I have always had a weakness for as a child. These days it’s still a treat but due to the amount of sugars it’s not a very healthy treat. So I decided to remake Honey Puff’s my style!

It’s a simple recipe yet so delicious.

They go great simply with milk or with some coconut yoghurt and red fruit!

 

Ingredients

 

  • 150 grams puffed brown rice
  • 4 tablespoons almond butter
  • 2 tablespoons agave syrup
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla powder
  • 1 teaspoon cinnamon
  • 4 tablespoons chia seeds
  • pinch of salt

 

Method

 

  1. Preheat your oven at 180c.
  2. Place the almond butter, agave syrup, coconut oil, vanilla powder, cinnamon and a pinch of salt in a small pan on a low heat and let the ingredients melt together.
  3. Then add the melted mixture to the puffed brown rice in a big bowl and mix well.
  4. Spread the mixture evenly on a baking tray and place in the oven for about 10 min until they are crispy.
  5. Then add the chia seeds and leave to cool. (Store them in an airtight box)

Almond & Cacao Energy Balls

 

These Energy Balls are the perfect snack or you can even use them as a pre-workout to get some extra energy!

 They are healthy, full of protein, full of healthy vitamins and fats and best of all, they are absolutely delicious!

Ingredients

Makes 15 Energy Balls.

  • 1 cup dates
  • 3/4 cup unroasted almonds  
  • Teaspoon cacao 
  • Teaspoon cacao nibs
  • Teaspoon Baobab (click here to see which Baobab I use)
  • 2 teaspoons chia seeds 
  • 1 teaspoon coconut oil 
  • 1 teaspoon almond butter
  • 1 teaspoon flaxseeds

 

Method

 

  1. Place the almonds in a food processor until they are fully crushed.
  2. Add all the other ingredients to the food processor and blend until it forms a sticky substance.
  3. Take a spoonful of the mixture at a time and use your hands to roll them into balls.
  4. Then roll the balls into some raw cacao powder, chia seeds or rasped coconut as a topping.
  5. Place them in the fridge for an hour to let them set. Store them in your fridge.

My Healthy and Simple Morning Routine

 

My morning routine is pretty simple. But it’s the morning which will effect your whole day.

I usually wake up from the smell of freshly made coffee coming from the kitchen. I have always been surrounded by coffee lovers even since I was small. (I used to drink Bamboo coffee as I didn’t want to miss out on something everyone was so obsessed about).

If I’m lucky il even get a coffee shoved underneath my nose and il wake up from the smell of golden delight. To me that’s the best alarm clock in the world, want to wake me up quickly and smiling than this is THE way to say good morning!

Before drinking my coffee though I try to drink 2 glasses of room temperature water with squeezed lemon. It’s the best way to wake up and cleanse your body first thing in the morning. (It’s also great for when you are on a diet as it helps shrink your tummy).

While sipping on my coffee I love to get some work done while still being comfortable in bed. It’s the perfect time for me to write some articles or reply to emails.

After a bit of work and coffee in bed I get up, and I make my bed. I know, I seem like such a good girl. But it’s actually psychologically very good for you. As this is the first task of your day, and you have finished it. Psychologically you feel like you have accomplished a task and this will help you finish every other task through the day.

 

 

I’m that kind of person that doesn’t always feel extremely energetic in the morning, I like to stretch and take it easy as I’m sipping on my coffee. So I like to have a wake-up call. That’s usually in the form of a shower ending with a few minutes of freezing water. This is great to wake up your entire body, helps improve your immunity and circulation and even stimulates weight loss. However, if I have a huge lake in front of my house (like I do in Switzerland) then I prefer going for a cold dip! It’s therapeutic, and it definitely wakes me up!

Then it’s time for my favourite meal of the day, BREAKFAST! You can click here to see all the delicious recipe’s I love to make in the morning! Breakfast is so important and you can get your imagination going! Also, breakfast is the time where you don’t have to feel guilty about adding chocolate to your meal as you’ll be burning it off during the day. Woohoo!! (Secretly that’s why it’s my favourite meal of the day!)

Cinnamon & Peach Porridge

 

Porridge is a great breakfast as it has a ton of health benefits and it’s even proven to have a positive long term effect on your health. It will help lower your cholesterol, lowers risk of heart and lung disease and will even help improve your skin.

It’s an amazing start in the morning as it gives you tons of energy and will keep you full for a long time (which will aid in weight loss – win win!)

You can prepare porridge in lots of different ways but one I have been making a lot lately is this recipe! It has the comforting flavour of the cinnamon and syrup accompanied by the fresh and sweet flavour of banana and peach. It’s simple,  super healthy and the best way to start an energetic day!

Ingredients

  • 1 ripe banana
  • 1 peach
  • 1 teaspoon cinnamon
  • 1 teaspoon chia seeds
  • 1 teaspoon agave syrup
  • 1 cup of water
  • 1/2 cup of oats
  • pinch of salt

 

Method

  1. Mix the water, pinch of salt and the oats in a pan and leave on a medium heat for about 4-5 minutes, stir frequently until it thickens up.
  2. In a separate bowl squash the banana and add the chia seeds and cinnamon.
  3. When your porridge is nice and thick put the banana mix into the porridge and mix well.
  4. Poor the porridge into a bowl and top it of with cubes of peach. Then finish of by sprinkling some extra cinnamon and a teaspoon of agave syrup on top.
