Tropical Coconut Chia Pod

I am in love with this Tropical Chia pod as it’s so refreshing, delicious and super easy to make! I have been making it a lot lately as I didn’t have a lot time in the morning to make breakfast so I prepare a few pots the evening before. It’s super quick to prepare and it’s full of nutrition and protein which will give you a great boost to start the day!

Ingredients

Makes 3 cups

  • 10 tablespoons Chia seeds
  • 3 cups coconut milk
  • 1 tablespoon agave syrup
  • 1 teaspoon vanilla powder
  • 2 peaches
  • 2 bananas

Method

  1. Put the chia seeds, coconut milk, vanilla powder and agave syrup in one bowl and mix well.
  2. Then poor the mixture into 3 separate cups.
  3. Now leave in your fridge to set. After about 10 min make sure to stir the mixture to make sure you don’t get any lumps. It will take about 2 hours or so for your pudding to set. You can also prepare it the evening before and leave it overnight so it’s ready for you to enjoy in the morning for breakfast.
  4. Once the Chia pudding is ready prepare the topping by placing the peaches and bananas in a blender and blend until smooth. Simply poor the smoothie on top as well as some more pieces of peach for extra yumminess!

Pecan Cinnamon Granola

This granola is one of my all-time favourites! It’s healthy, delicious, easy to make and if you keep it in an airtight container you’ll be able to enjoy it for more than a week – in my house it doesn’t last that long! 😉

Ingredients

Makes one big jar of granola.

  • 300 grams oats
  • 100 grams pecans
  • 3 dates
  • 50 grams shaved almonds
  • 100 grams agave syrup
  • 60 grams liquid coconut oil
  • 1 tablespoon chia seeds
  • 1 tablespoon hennep seeds
  • 3 tablespoons cinnamon

Method

  1. Start by turning on the oven on 180c (fan).
  2. Place the oats, shaved almonds and cinnamon inside a big bowl and mix.
  3. Break the pecans in half or smaller and mix into the bowl.
  4. Get a smaller bowl and put the coconut oil and syrup inside, mix until it forms one thick liquid.
  5. Pour the coconut oil and syrup mix into the large bowl with the other ingredients and mix well until everything sticks together.
  6. Place the mixture into a baking tray and spread it out evenly.
  7. Bake in the oven for about 15-20 min until golden brown, mix everything frequently to make sure the top doesn’t burn.
  8. In the meantime cut the dates into small pieces.
  9. When you’re granola is done take it out of the oven and mix in the chia seeds, hennep seeds and small bits of dates, then leave to cool.

There you have it! You’re own home-made granola which isn’t only yummy, but it’s also super healthy and will give you a great boost in the morning. Ready to start the day!

Summery Strawberry Chia Jam

Days are getting longer and mornings are getting warmer, which means it’s time to whip out the fresh strawberries and create something summery to get in the spirit! Jam is a classic in any household but it usually consists of lots of sugars. This strawberry jam has no refined sugar but instead has lots of vitamins from the fresh fruit and protein which comes from the chia seeds. This means it’s a great way to start the day!

Put some on your porridge in the morning, on a cracker as a snack or even on a cheeky piece of cake or on pancakes as a topping! It’s super yummy and definitely very healthy!

Ingredients

  • 250 grams fresh strawberries
  • 3 tablespoons agave syrup
  • 2 ½ tablespoons chia seeds

Method

  1. Start by placing the agave syrup and strawberries in a sauce pan and bring them to boil.
  2. Let them simmer for about 5 min, stir regularly.
  3. Then mash the strawberries using a fork or a potato masher.
  4. Once the strawberries are mashed stir in the chia seeds.
  5. Lower the heat and let it simmer for about 10-15 min, stir often.
  6. Once the mixture starts to thicken remove from the heat and poor it in an airtight jar.

Keep the jam in the fridge and you’ll be able to enjoy it for around a week. Buon a petite!X
