Healthy Vegan Banana Bread

 

I am head over heals about banana bread! I think its the yummiest breakfast or snack which is also super healthy and gives you tons of energy! Win win!

This banana bread is extremely easy to prepare and you’ll love how comforting the flavours are. The texture of the bread is spongy and slightly firm on the outside with a slight crunch from the caramelised topping of walnuts. I love to spread some peanut butter on top for some extra deliciousness!

Ingredients

  • 4 over ripe bananas
  • 1/2 teaspoon vanilla powder
  • 3 tablespoons chia seeds
  • 2 tablespoons cinnamon
  • 1 cup brown flower
  • 1 cup almonds
  • 2 cups pecans
  • 1 cup walnuts
  • 1/2 cup maple syrup + 1 tablespoon for topping
  • Coconut oil to grease the loaf tin

 

Method

 

  1. Pre-heat your oven to 150c.
  2. Place the almonds and pecans in a food processor and blend for about 20 seconds until it forms a flour.
  3. Then place the flour mixture into a large bowl and add the vanilla powder, chia seeds, cinnamon, brown flower and last the maple syrup.
  4. In another bowl mash the bananas until they are smooth. Then add the banana mixture to the large bowl and mix everything together well until it forms a sticky mixture.
  5. Grease in your loaf tin with coconut oil and simply pour in the banana bread mixture.
  6. As a topping break the walnuts into a few smaller pieces (in half or in 4) then place them in a small bowl. Add about a tablespoon of maple syrup and mix until all the walnuts are covered with syrup.
  7. Simply place the syrup covered walnuts on top of the banana bread.
  8. Place it in the oven for about 1 hour.
  9. You know your banana bread is ready when its slightly golden and when sticking a knife in it comes out clean!

Apple & Blackberry Crumble

 

Since I made it for the first time I completely became obsessed with this recipe! It’s perfect for those wintery days to have a cheeky dessert that’s comforting as well as super healthy. However, it’s a total winner in the summer too as you can serve it with a bit of creamy vegan vanilla ice-cream on the side – yum!

 

Ingredients

Crumble layer 

  • 180 grams oats
  • 200 grams almonds
  • 3 tablespoons coconut oil
  • 2 teaspoons cinnamon
  • 1/2 teaspoon vanilla powder
  • 80 ml maple syrup

 

Bottom fruit layer

  • 7 red apples
  • 200 grams blackberries
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla powder
  • 1 teaspoon cinnamon

 

Method

 

  1. Preheat your oven to 180c.
  2. First start by making the crumble layer. Place the almonds in a food processor and blend until it forms a flour.
  3. Then mix the almond flour with the oats in a bowl.
  4. Place a sauce pan on low heat and add the coconut oil, cinnamon, vanilla powder and maple syrup. Mix for a minute until the coconut oil is fully melted and all the ingredients are well mixed together.
  5. When ready pour this mixture into the bowl with the almond flour and oats and mix well until all the dry ingredients are coated with the coconut maple mix.
  6. Leave this bowl aside, get ready to make the fruit layer.
  7. Peel all the apples and cut out the core. Then cut the apples into small cubes of about 1-2 cm.
  8. When you are done place all the apple cubes into a large saucepan together with the blackberries, maple syrup, vanilla powder and cinnamon. Before turning on the heat pour in a layer of 1 cm of boiling water, just enough to cover the bottom.
  9. Turn the heat on medium, cover it with the lid and let it simmer for about 15 min until all the fruit is nice and soft.
  10. Once your fruit is ready place them at the bottom of your baking dish, make sure not to transfer a lot of the liquid as you don’t want your crumble to become soggy.  Then add the crumble on top and spread it out nice and evenly.
  11. Place it in the oven for 20-25 min until the top is beautifully golden.

 

Now get stuck in while it’s still warm – it’s the best!

Vegan hazelnut chocolate cookie ice-cream sandwich

 

This is the ultimate treat that is so easy to make but oh so delicious! Especially in the summer it’s always fun to make a little bit of a naughty dessert and this one will always be one of my favourites! Grown ups will lick their lips and get stuck in just as much as the littles ones will do, no one will be able to resist!

 

Ingredients

Makes 6 cookies

  • 2 tablespoons almond butter
  • 4 tablespoons agave syrup
  • 4 tablespoons unsweetened cacao powder
  • 1 teaspoon vanilla powder
  • 4 tablespoons flower
  • pinch of salt
  • 2 tablespoons coconut oil
  • 2 hands full of hazelnuts

 

Method

 

  1. First preheat your oven to 180c.
  2. Place the hazelnuts in a blender and pulse a few times until they are broken into small pieces – make sure you don’t blend them too much as you don’t want them to turn into powder.
  3. Combine the almond butter, agave syrup and coconut oil in a bowl and mix until it forms a smooth texture.
  4. Then add the flower, salt, vanilla powder and pieces of hazelnut and mix well until it forms a dough.
  5. Form 6 balls of the dough using your hands and place them evenly spread out on a sheet of baking paper.
  6. Then press them down to form the cookies.
  7. Place them in the oven for about 10-12 minutes.
  8. Once they are done let them cool down so they will become firm and you’ll be able to make a perfect ice-cream sandwich.
  9. In-between two cookies put a scoop of your favourite ice-cream. I like to make mine with home-made banana ice-cream. Press the top cookie down and you’ve got yourself the most delicious vegan ice-cream sandwich! Enjoy!

Coconut & Almond Energy balls

 

I’m in love with these energy balls!

Especially in the summer when i’m on the go a lot I love to just grab one (or two) on the way out so I can have a little moment of pure delight. The coconut gives it an extremely tropical flavour making it extra summery!

Ingredients

 

  • 1 cup dates
  • 3/4 unroasted almonds  
  • 1 tablespoon rasped coconut
  • 2 teaspoons chia seeds 
  • 1 teaspoon coconut oil 
  • 1 teaspoon almond butter
  • extra rasped coconut for topping

 

Method

 

  1. Place the almonds in a food processor until they are fully crushed.
  2. Add all the other ingredients to the food processor and blend until it forms a sticky substance.
  3. Take a spoonful of the mixture at a time and use your hands to roll them into balls.
  4. Then roll the balls into some rasped coconut as a topping.
  5. Place them in the fridge for an hour to let them set. Store them in your fridge.
