Green Coconut Smoothie

This smoothie is perfect for a quick breakfast or if you need a little pick up throughout the day! It’s extremely refreshing and definitely sweet for a green smoothie. I love making a big jug of it especially in the summer! It’s simple and you don’t need many ingredients to make something healthy and delicious!





Makes one big cup 

  • 1 handful of Spinach
  • 1 ripe banana
  • 2 soft dates
  • 2/3 cup Coconut water
  • 1/3 lemon
  • teaspoon hemp seeds




  1. Simply place all ingredients in a blender and blend until smooth.

Then, enjoy!

The best vegan ice-cream on the lake in Como, Italy.


When you’re in Italy you can expect to be finding yourself stuffing your face with ice-cream, lets be honest here. My diet has consisted of espresso’s, pasta and ice-cream in the last few days and apart from going for that extra run I feel great! Being vegan in Italy has always been seen as a very difficult task. But that’s not always true. I have been going to Italy for quite a while and have found some amazing Italian meals that even I can order in a restaurant or cafe. Nevertheless, I have recently discovered an ice salon which is now one of my favourite spots in Como.


What I like

In a small side street you will find a spot named Vanilla BioVanilla Bio is an ice salon which only sells vegan and bio ice-cream. Two bubbly girls make you try all the flavours you want and make you even more indecisive as everything you taste is as good as the other. However, if you want to dulge in delight you have to try two of my favourite  flavours, ‘coconut’ and ‘chocolate’. They are both vegan and absolutely delicious. Imagine a crispy cone with the most creamiest and flavoursome ice-cream, all plant based.

When you visit Como you can’t miss out on this spot, and trust me you wont be returning just once.

Coffeelab – the trendiest coffee spot with the most delicious cappuccino


Who doesn’t love walking through the city on an early morning with the sun in your face while you walk towards your favourite cafe to get a fresh cup of coffee. I mean, does it get any better than that? I love Eindhoven not only because its my home-town, but also because its a city that represents a typical Dutch atmosphere. Here you actually walk over the street while saying good morning to strangers, say “bless-you” to someone who sneezed but you’ve never seen before. Everyone is on a bicycle or walking and seem to take their time, enjoying the sun, because there is no rush. We take our time to have our sweet breakfast, to cycle to work and stop along the way to get our favourite coffee.



One of my favourite places to grab my morning coffee is at Coffeelab.

When I first came to Coffeelab I immediately felt comfortable. Fresh green plants cover the ceiling and a warm atmosphere is created by the wooden interior and the smell of freshly made coffee and croissants. It’s a place where you feel at home.


What I get

That’s not a hard choice right?! Coffee of course! They roast their own coffee which is a blend made with 70% Brazilian beans and the remaining 30% originates from various other African countries. The coffee has a delicious sweet and fruity taste and its not at all bitter nor watery – an absolute winner for me!

I usually get a Cappuccino (2.80 Euro) with almond or oat milk. But they also offer coconut and soy milk – plenty to choose from!

They also make fresh snacks or if you feel like something fresh you’re also at the right address! They have various delicious smoothies which are made with 100% biological ingredients. My favourite is ‘Lovely Green‘ (4.95 Euro) which is made with spinach, avocado, appel, broccoli, mango, spirulina, wheatgrass and barley grass. For those who prefer the pink smoothies then the ‘Berry Bomb‘ is the perfect choice! This smoothie is made with acai, blueberry, blackberry, banana, strawberry, apple, hennep protein and Baobab. It’s deliciously sweet but still super healthy! Win win!

Coffeelab is open everyday  from Monday to Friday it’s open from 7am-7pm, on Saturday 9am-7pm and on Sunday 10am-7pm. The address is Stationsplein 17, 5611 AC Eindhoven.

Vegan mango and blueberry pancakes


Happy Fridays, cosy Sundays or stressful Mondays, any day is a good day for pancakes! This recipe is extremely nutritious and perfect for a filling breakfast that will give you lots of energy for the day.  It’s definitely one of my favourite recipes, and I always choose to make these pancakes if I want to impress someone with a great breakfast!

Especially now that the days are getting warmer I love to have a summery breakfast with lots of fruity flavours. You can whip these pancakes up within 10 minutes and if you add a little coconut yoghurt as a topping at the end you’ll have a tropical meal that will remind you of the island life!



Recipe for 20 medium pancakes

  • 2 bananas
  • 4 slices of mango
  • 1 cup of oats
  • 2 tablespoons of almond butter (or another nut better)
  • 3 cups of coconut milk
  • 1 cup blueberries
  • 1 tablespoon coconut yoghurt
  • 1 teaspoon Baobab powder (Click here to see what Baobab powder I use)
  • coconut oil (to grease your pan)


  1. Place the mango, bananas, oats, Baobab powder, almond butter and coconut milk in a blender and mix until smooth.
  2. Simply pour the mixture into a bowl and stir in the blueberries.
  3. While you leave the mixture to rest for a minute heat up a frying pan and grease it with some some coconut oil
  4. Once the pan is very hot place about a tablespoon of mixture into the pan and fry for about 2 minutes on each side, until golden brown.  Make sure that you don’t flip them over too early, as you need to wait until each side is firm so they won’t break while flipping over.
  5. When they are done place them on your plate and top them of with some fresh blueberries and a tablespoon of coconut yoghurt.


Simple, healthy and so yum! Bon appétit!

Simple avocado toast with roasted tomatoes

A simple Avocado Toast on a Sunday morning is exactly what makes me happy! It’s rich, delicious and extremely nutritious. Avocado is full of healthy fats, vitamins, fibre, antioxidants and actually contains more potassium than bananas. An avocado is known to be high in fat, but these fats are in fact monounsaturated fatty acids which is a very heart-healthy fat. Eating avocado’s often may even help to lower your cholesterol and to help you lose weight. All this is stored within a small avocado which also happens to taste absolutely delicious! I think thats a win win!

Here is how I love to make my Avocado Toast with roasted tomatoes on crunchy Rye bread.


Serves:  1

  • Slice of your favourite bread (I use Rye bread)
  • 1 teaspoon olive oil
  • 6 cherry tomatoes
  • 1 small shallot
  • 1 big avocado
  • 1 lime
  • Salt and pepper


  1. Cut the avocado in half and scoop the flesh out which you then place in a bowl.
  2. Chop 3 cherry tomatoes and the shallot in small pieces, then add them to the bowl.
  3. Add 1 teaspoon of olive oil and season with some salt and pepper.
  4. Then mash all the ingredients together using a fork.
  5. Now heat up a pan and add a splash of olive oil. Place the rest of your tomatoes in the pan for about 5 minutes on medium heat and roast them until slightly brown.
  6. When the tomatoes are done place them on your plate and leave them to rest.
  7. Now you can toast your bread.
  8. Spread the avocado mash over a piece of toast and finish off by squeezing some lime on top.


So simple, so healthy and so yum!

I have discovered the new African SUPERFRUIT – why and how we should add this to our diets

Breakfast, the most important and the best meal of the day! Starting the morning with a cup of coffee is for me a must, however straight after I will be making my breakfast which usually consist of a smoothie, porridge, or on an extra good day some delicious pancakes! However, I now add something to my morning routine that makes my mornings even better! Il add a spoon of Aduna‘s Baobab super fruit powder to my breakfast and I’ve got all the vitamins I need to start the day.

Let me tell you about Africa’s super fruit which is named ‘Tree of Life’. Baobab is a fruit that has an extremely high dosage of Vitamin C and fibre, which helps aid in your overall health.
