Vegan Fluffy Banana Pancakes

 

The weekend calls for pancakes!

Whats a better way to wake up on Sunday morning to the smell of freshly made banana pancakes! These are the fluffiest and tastiest banana pancakes I have ever made, whilst still being healthy! You can whip them up in only 10 min and decorate them with whatever you like. I love them simple with slices of fresh banana, crushed pecans for a little crunch and a drizzle of maple syrup – yum!

 

Ingredients

  • 1 large banana
  • 2 tbsp agave syrup
  • 150 grams wheat flour
  • 170 ml almond milk
  • 1 tbsp coconut oil + extra for frying
  • 1 tsp cinnamon
  • 1 tsp vanilla powder
  • 1/2 tbsp baking powder
  • Pinch of salt

Toppings:

  • Maple syrup
  • Pecans
  • Sliced banana

 

Method

  1. In a large bowl mix together the flour, cinnamon, vanilla powder, baking powder and salt.
  2. In a separate small bowl mash the banana and coconut oil together.
  3. Pour the smooth banana mixture into the large bowl and mix with the dry ingredients.
  4. Then add the agave syrup and almond milk and mix well until a smooth and thick mixture forms.
  5. Heat up a nonstick pan with a little coconut oil and pour in some of your pancake batter to form your first pancake! Fry them on each side until golden brown and make sure they had enough time to cook all the way through.
  6. Once they are ready serve your pancakes with some crushed pecans and sliced bananas and finish off by drizzling over some maple syrup!

Vanilla Pancakes with coconut and pecans

 

We all have a soft spot for pancakes! This is my favourite pancake recipe so far and I love making it on weekends for breakfast as a little treat. They are super easy to whip up and and extremely tasty. As I am Dutch I grew up with pancakes and my mother always used to make them thin and crispy. Now I have finally created a recipe which tastes just like hers, but then with a healthy & vegan twist!

 

 

Ingredients

 

For the pancakes

  • 1 teaspoon baking powder
  • 450 ml almond milk
  • 300 grams wholegrain flower
  • 2 teaspoons vanilla powder
  • Pinch of salt
  • 1 teaspoon chia seeds
  • 1 teaspoon agave syrup
  • 2 teaspoons runny coconut oil (plus some for baking)

 

As topping

  • Coconut yoghurt
  • Handfull of pecans
  • Rasped coconut

 

 

Method

 

  1. Place all the pancake ingredients in one bowl and mix well until it forms a smooth texture. You need the mixture not to be too thick but actually slightly runny as you need to be able to make the pancakes thin and crispy when you bake them. (If it’s too thick add a little almond milk)
  2. Heat up a frying pan with a little coconut oil and scoop in some batter mixture.
  3. Bake your pancakes until golden and slightly crispy on both sides.
  4. When serving top them off with a spoon of coconut yoghurt and sprinkle some rasped coconut and crushed pecans on top.

Best Vegan Pancakes at The Meets Eatery, Amsterdam

 

Breakfast is my favourite meal of the day and what’s a better way to start the day than with some pancakes! Being such a pancake lover I decided to go for a vegan pancake hunt in my favourite city, Amsterdam!

I quickly found a cafe that is now one of my favourite spots in this beautiful city. The Meets Eatery is a cafe that serves one of my favourite all time breakfasts. It’s located in a trendy and cosy part of the city that is full of life and energy.

I love to sit on the terrace in the sun, watching people go by on their cycles while enjoying my cup of coffee and of course, digging into the best vegan pancakes I have ever tasted.

The Meets Eatery serves the most delicious vegan meals that are home-made and locally sourced. Everything on the menu is free from refined sugars and additives, and are mostly organic. I fell in love with how vibrant and exciting their menu is. However, even the classics like a good cup of coffee and a vegan croissant are an absolute winner.

 

 

 

What to have

 

 

 

However, the ultimate breakfast is the vegan ‘Apple Cinnamon Pancakes‘. (9.50/8.30 Gbp) These pancakes are made using spelt flour which makes them super healthy but will also keep you full for longer – which helps you with your diet. They are served with warm apple that just makes you think of cosy winter nights. The cinnamon gives a warming sweet flavour while the crunchy nuts that are sprinkled on top give a pleasant crunch. The combination of flavours and textures is so incredible. In fact, it’s so good, I bet no-one would ever believe the fact that they are vegan.

 

 

Lunch/Dinner

 

 

Another great lunch or starter for in the evening is the ‘Red Lentil Soup‘ (S 6.50/5.70 Gbp, L 8.50/7.45 Gbp). It consists of red lentils, carrot, ginger, turmeric and coconut milk. It’s a very comforting and creamy soup which is full of flavour.

However, if you are a little more hungry then you have to try the ‘Mexican Veggie Burger‘ (11.50/10 Gbp). It consists of sweet potato, black beans, quinoa and is served with avocado or vegan mayo. It’s an amazing treat that you won’t even have to feel guilty for afterwards!

If you’ve still got a little spot then I highly suggest you to try one of their great vegan desserts or sweets. I mean, doesn’t a vegan ‘Chocolate Tart‘ just sound like the ultimate end of a great evening?! The tart is made with peanut and dark chocolate and finished of with a caramel peanut sauce. In other words, heaven on a plate!

The Meets Eatery is open from Monday to Thursday at 11AM–10PM and from Friday to Sunday at 9:30AM–10PM.  Their address is Cornelis Troostplein 3 in Amsterdam.

Vegan mango and blueberry pancakes

 

Happy Fridays, cosy Sundays or stressful Mondays, any day is a good day for pancakes! This recipe is extremely nutritious and perfect for a filling breakfast that will give you lots of energy for the day.  It’s definitely one of my favourite recipes, and I always choose to make these pancakes if I want to impress someone with a great breakfast!

Especially now that the days are getting warmer I love to have a summery breakfast with lots of fruity flavours. You can whip these pancakes up within 10 minutes and if you add a little coconut yoghurt as a topping at the end you’ll have a tropical meal that will remind you of the island life!

 

Ingredients

Recipe for 20 medium pancakes

  • 2 bananas
  • 4 slices of mango
  • 1 cup of oats
  • 2 tablespoons of almond butter (or another nut better)
  • 3 cups of coconut milk
  • 1 cup blueberries
  • 1 tablespoon coconut yoghurt
  • 1 teaspoon Baobab powder (Click here to see what Baobab powder I use)
  • coconut oil (to grease your pan)

Method

  1. Place the mango, bananas, oats, Baobab powder, almond butter and coconut milk in a blender and mix until smooth.
  2. Simply pour the mixture into a bowl and stir in the blueberries.
  3. While you leave the mixture to rest for a minute heat up a frying pan and grease it with some some coconut oil
  4. Once the pan is very hot place about a tablespoon of mixture into the pan and fry for about 2 minutes on each side, until golden brown.  Make sure that you don’t flip them over too early, as you need to wait until each side is firm so they won’t break while flipping over.
  5. When they are done place them on your plate and top them of with some fresh blueberries and a tablespoon of coconut yoghurt.

 

Simple, healthy and so yum! Bon appétit!
