Vanilla Pancakes with coconut and pecans

 

We all have a soft spot for pancakes! This is my favourite pancake recipe so far and I love making it on weekends for breakfast as a little treat. They are super easy to whip up and and extremely tasty. As I am Dutch I grew up with pancakes and my mother always used to make them thin and crispy. Now I have finally created a recipe which tastes just like hers, but then with a healthy & vegan twist!

 

 

Ingredients

 

For the pancakes

  • 1 teaspoon baking powder
  • 450 ml almond milk
  • 300 grams wholegrain flower
  • 2 teaspoons vanilla powder
  • Pinch of salt
  • 1 teaspoon chia seeds
  • 1 teaspoon agave syrup
  • 2 teaspoons runny coconut oil (plus some for baking)

 

As topping

  • Coconut yoghurt
  • Handfull of pecans
  • Rasped coconut

 

 

Method

 

  1. Place all the pancake ingredients in one bowl and mix well until it forms a smooth texture. You need the mixture not to be too thick but actually slightly runny as you need to be able to make the pancakes thin and crispy when you bake them. (If it’s too thick add a little almond milk)
  2. Heat up a frying pan with a little coconut oil and scoop in some batter mixture.
  3. Bake your pancakes until golden and slightly crispy on both sides.
  4. When serving top them off with a spoon of coconut yoghurt and sprinkle some rasped coconut and crushed pecans on top.

The Best Neapolitan Pizza in Como

 

I’m totally in love with Italy so it’s no wonder I found myself an Italian boyfriend! I always had a strong connection with the country of passion, love and food. But of course since I actually fell in love with a guy there my connection just became stronger and I now like to visit as often as I can!

I have been spending lots of time in Como and I thought that it wouldn’t be a bad idea to find out where you can have the best vegan pizza in town! Lots of pizza’s and glasses of wine later and I have finally found the perfect spot!

Often the less prettier and old fashion restaurants is where you can eat the best food. One of those places just like that is Pizzeria Da Benito. This pizzeria is hidden away in a small street 5 minutes walking from the centre. When the sun is shining you can sit outside and enjoy a cold glass of wine while you wait for the ultimate pizza.

 

What I love

 

Pizzeria Da Benito makes the best pizza marinara, an ultimate classic.  This pizza has a crispy crust, as you take a bite you can hear the crust break and white flower dust remains on your fingers. The tomato sauce is so rich, you can taste the freshness of each ingredient. And even though there is lots of sauce the bread remains crispy. It has the perfect balance of textures and flavours. You can truly taste the classic Italian flavours that will remind any Italian of their grandmothers food. It’s honest, and purely delicious.

What’s also amazing is the fact that they offer a choice of pizza dough. Instead of normal white dough you can also have a wholegrain, multigrain or kamut base. Making your pizza extra healthy! Healthy, fresh and absolutely delicious! Doesn’t this just sound like a dream?!

Vegan Chocolate Mousse

 

For any chocolate lover (like me) this is the ultimate recipe!

This chocolate mousse is so smooth, flavourful and if you are looking to satisfy your chocolate cravings then this is definitely the most healthy but also the most satisfying dessert you could ever make.

It may seem strange at first to be making chocolate mousse with avocado, but it actually gives the mousse a very smooth texture. All the other ingredients will also overpower the avocado flavour so I’m sure no one will even believe you have used avocado’s in the first place!

 

Ingredients

 

  • 1 banana 
  • 1 large avocado
  • 4 teaspoons cacao 
  • 80 ml almond milk 
  • 8 medjool dates
  • Pinch of salt 

 

Method

 

  1. First, pit your dates and soak them in boiling water for at least 10 min, so they get nice and soft. 
  2. Then place all the ingredients into a food processor and blend until everything is smooth. 
  3. Place your mixture into bowls and leave in the fridge to set. 
  4. When serving top of with a spoon of coconut yoghurt and sprinkle with cacao nibs.

Cinnamon & Peach Porridge

 

Porridge is a great breakfast as it has a ton of health benefits and it’s even proven to have a positive long term effect on your health. It will help lower your cholesterol, lowers risk of heart and lung disease and will even help improve your skin.

It’s an amazing start in the morning as it gives you tons of energy and will keep you full for a long time (which will aid in weight loss – win win!)

You can prepare porridge in lots of different ways but one I have been making a lot lately is this recipe! It has the comforting flavour of the cinnamon and syrup accompanied by the fresh and sweet flavour of banana and peach. It’s simple,  super healthy and the best way to start an energetic day!

Ingredients

  • 1 ripe banana
  • 1 peach
  • 1 teaspoon cinnamon
  • 1 teaspoon chia seeds
  • 1 teaspoon agave syrup
  • 1 cup of water
  • 1/2 cup of oats
  • pinch of salt

 

Method

  1. Mix the water, pinch of salt and the oats in a pan and leave on a medium heat for about 4-5 minutes, stir frequently until it thickens up.
  2. In a separate bowl squash the banana and add the chia seeds and cinnamon.
  3. When your porridge is nice and thick put the banana mix into the porridge and mix well.
  4. Poor the porridge into a bowl and top it of with cubes of peach. Then finish of by sprinkling some extra cinnamon and a teaspoon of agave syrup on top.

The ultimate Chickpea burger

 

Who doesn’t love a good burger. Especially being vegan I’m guilty of fancying a delicious burger especially knowing that vegan burgers are actually very healthy and nutritious and at the same time really comforting. Especially in the summer I love to sit outside on a warm evening with friends and get our hands dirty. Whenever I fancy a burger it’s this recipe that I love to make as it’s easy, healthy and absolutely delicious. It’s always a winner!

 

Ingredients

Makes 6 medium burgers

  • 1 tin (340g) sweetcorn
  • 1 tin (400g) chickpeas
  • 1 lemon
  • ½ a bunch fresh coriander
  • ½ teaspoon ground coriander
  • ½ teaspoon paprika
  • nut oil
  • 3 tablespoons wholemeal flour
  • 6 wholemeal burger buns
  • 3 large tomatoes
  • ½ medium white onion
  • 2 hands full of spinach
  • salt and pepper

 

Method

  1. First drain the chickpeas and sweetcorn, make sure no water remains. Then place them in a food processor.
  2. Then also add the spices, flour, coriander, grate in the lemon zest and season with some salt and pepper.
  3.  Pulse this mixture until everything is combined, but not smooth – you want to retain some texture.
  4. Dust a plate or a surface with flour and scoop out your mixture with a spoon shaping them into 6 individual burgers. Try to make them equally sized.
  5. When done leave them in the fridge to firm up for about 30 min.
  6. Put some oil in a large pan over a medium heat and bake your patties for about 8-10 min, until they are golden brown on both sides.
  7. Slice your union and tomatoes into slices, and wash your spinach.
  8. First toast your burger buns and then you’ll be ready to create your burger!
  9. Get the bun and place your patty on the bottom,then layer with slices tomato, onion and spinach. Add some ketchup or vegan mayo for the ultimate delight.
