Moroccan Cauliflower and Quinoa Power Bowl

 

I’m in love with this super yummy and healthy power bowl! It’s the perfect combination of healthy fats, carbs and full of vitamins. It’s perfect for lunch if you need an energy boost or for dinner after a busy day. It’s a comforting bowl full of goodness!

It won’t take you to long to whip this meal up and it’s perfect if you’re cooking for a few people – you’ll definitely impress your friends with this one!

Ingredients

 

Makes 2 bowls

  • 1 small or 1/2 big cauliflower
  • 1 avocado
  • 1 bag of spinach
  • 1 big sweet potato
  • Few sun-dried tomatoes
  • 100 grams quinoa
  • 2 tablespoons hummus
  • 1 tablespoon Ras el hanout powder
  • 2 tablespoons liquid coconut oil
  • Salt and pepper

 

For the dressing

  • 1/2 lemon
  • 6 tablespoons olive oil
  • 1 tablespoon agave syrup
  • salt and pepper to taste

 

Method

 

  1. Preheat the oven on 220c.
  2. Wash your cauliflower and remove the florets from the stalk and place them in a bowl.
  3. Then add the coconut oil and sprinkle some salt, pepper and the Ras el hanout powder on top and mix well.
  4. Next place the cauliflower on a parchment-lined baking sheet and place it in the oven for about 15 min until they turn slightly brown. Make sure to check them every few minutes to make sure they don’t burn.
  5. Meanwhile cut the avocado into small pieces and cook the quinoa according to the package.
  6. Then cut the sweet potato into small cubes and boil for about 5-6 minutes until they are soft.
  7. To prepare the spinach place a little coconut oil in a pan and bake until soft.
  8. Once the cauliflower, sweet potato, spinach, quinoa and avocado are ready you can whip up your dressing by adding all ingredients into a bowl and mixing well.
  9. Now you are ready to prepare your bowl!
  10. Simply place the quinoa on the bottom as a base and place the cauliflower, sweet potato, avocado and spinach on top. Finish it off by topping it with a spoon of hummus, some sun-dried tomatoes and of course by drizzling over some of your dressing!

Fairytale Thai food in Saint-Tropez, Le BanH-Hoi

 

BanH-Hoi is truly one of my favourite spots in Saint-Tropez. I am in love with it’s atmosphere, vibe, location and most of all it’s amazing food. It’s a little hidden in-between the cute streets that lead you around town. But as soon as you walk into the right road you’ll notice the restaurant straight away. With it’s cute tables set in the middle of the road and light creating a fairytale like atmosphere. You walk into a little dream that is just going to get better.

What to have

I’m honestly in love with their menu. It’s so classic but with a little twist that will make you get excited. Everything they serve is colourful, full of honest and raw flavours and extremely high in quality. As I mentioned before, this is one of my favourite restaurants – however, I might even say this is my ultimate favourite. Yes, it’s that good.

 

Starter

As a starter I love ordering the Spinach filled Dim Sum. They are perfectly steamed filled with lots of spinach that’s so full of flavour. It’s a bomb of healthy green goodness and every mouth full is divine. It’s the best start to a delicious dinner.

 

 

Main

The ultimate main that you have to try is the Vegetable Basil Curry. This plate is overloaded with fresh crunchy vegetables bathing in a coconut curry sauce that is so creamy and rich. It’s honestly the best curry I have ever had as the flavours are fresh, comforting, tropical and they come together perfectly. I personally believe it’s the best dish on the menu.

As a side dish that’s a must try is the Sticky rice with coconut milk steamed in it’s bamboo stick. It’s unlike any rice you have ever tasted. It’s sweet, but not overly sweet. As soon as you take your first bite all the flavours kick in and as a finishing touch the bamboo flavour comes through. It’s absolutely amazing.

Another dish that is absolutely delicious are the Crispy vegetables rolls. They are perfectly crispy and filled with fresh vegetables. Served with lettuce and fresh mint you can decorate your own spring roll making it even more refreshing and tasty.

BanH-Hoi is open everyday from 19.30- 23.30 and their address is 12 Rue du Petit Saint-Jean in St-Tropez.

Cashew & Coconut Oat Pot – the healthiest way to start the day

This is one of the healthiest breakfasts you can have and it’s super quick to make! Perfect for those with busy mornings but wanting to have a healthy start to the day.

It gives you lots energy and it’s full of healthy oils. Also, as it’s quite filling it will keep you full until lunch! Which is a win if you are on a diet.

 

 

Ingredients

 

  • 150 grams oats
  • 2/3 cup of cashews
  • 6 soft dates
  • 3 tablespoons rasped coconut
  • 1 tablespoon coconut oil
  • 1 teaspoon cinnamon
  • squeeze of lemon

 

Method

 

  1. Soak the cashews and oats in some water for at least 5 hours or overnight if you are wanting to have it for breakfast. Also make sure your dates are soft – if their not put them in a cup of boiling water and leave to soak for a bit so they can soften up.
  2. When you’ve soaked everything drain the access water and place all the ingredients together in a blender.
  3. Simply blend until it forms a smooth mixture.
  4. Pour it in a cup and top it off with some more cashews or even some blueberries!

A trendy spot serving the most exciting dishes in the city: MOOD, Eindhoven

 

MOOD is a popular restaurant in the middle of Eindhoven’s city centre. It’s designed beautifully and even though it has it’s modern look the vibes are extremely cosy, classy and trendy. It has an amazing atmosphere and from the moment you sit down you feel like you are in for a treat. Even though the inside of this restaurant is amazing, I love to sit on their buzzy terrace especially in the summer. Imagine a warm summer evening with some friends, sitting outside with a glass of wine and the most exciting dinner spread out for you on the table. For me, this is one of the most lively and exciting spots in the city where the atmosphere isn’t only inviting, the food is also absolutely delicious!

 

What to have

 

The menu here is irresistible – this counts for both non-vegans and vegans. The food they serve is a combination of French and Asian cuisine. It’s extremely vibrant, colourful and a little experimental at some points.

I love to start with a little picking and the perfect dish to place in the middle of the table are Edamame (€4,50/£4). Its a great dish to share and they are super delicious and very healthy, win win!

After some picking the real feast begins. I am personally in love with the Vegetarian sushiroll (€13.50/£12). They make this sushi roll colourful and extremely exciting as it’s full of flavours and textures. It’s beautifully presented on a plate and every bite is an explosion of flavours. The roll is made with asperges, (tamago for vegetarians), cucumber and avocado. It’s slightly sweet and refreshing at the same time. This is my ultimate favourite dish that I recommend to anyone!

As a side dish or even as a main for lunch or dinner I love getting the Thai mango salad (€8,50/£7.50). It consists of sweet and spicy avocado, cucumber, quinoa, and mango. It has lots of colours and flavours and it’s extremely refreshing – which is amazing especially in the summer.

 

Some days you have to be lucky to get the king of desserts. Because sometimes they make THE most delicious chocolate brownie I have ever tasted. This brownie tastes like everything you have ever dreamed off. It’s gooey from the inside and the outside layer is slightly crispy. It’s presented like art on a plate surrounded by strawberry sauce and fresh strawberries. The combination of the rich chocolate and the fresh strawberries is so powerful and extremely delicious. Trust me, this brownie overrules any vegan and non-vegan brownies, it’s THAT good.

 

 

Where to go

 

MOOD is open from Monday to Saturday at 12:00 – 23:00 and on Sunday from 14:00 – 23:00. They are located on Keizersgracht 6 in Eindhoven.

On weekends I highly suggest you book a table as it get’s very busy.

I’m sure you’ll fall in love with this spot just as much as I did! Bon a petit!

Vanilla Pancakes with coconut and pecans

 

We all have a soft spot for pancakes! This is my favourite pancake recipe so far and I love making it on weekends for breakfast as a little treat. They are super easy to whip up and and extremely tasty. As I am Dutch I grew up with pancakes and my mother always used to make them thin and crispy. Now I have finally created a recipe which tastes just like hers, but then with a healthy & vegan twist!

 

 

Ingredients

 

For the pancakes

  • 1 teaspoon baking powder
  • 450 ml almond milk
  • 300 grams wholegrain flower
  • 2 teaspoons vanilla powder
  • Pinch of salt
  • 1 teaspoon chia seeds
  • 1 teaspoon agave syrup
  • 2 teaspoons runny coconut oil (plus some for baking)

 

As topping

  • Coconut yoghurt
  • Handfull of pecans
  • Rasped coconut

 

 

Method

 

  1. Place all the pancake ingredients in one bowl and mix well until it forms a smooth texture. You need the mixture not to be too thick but actually slightly runny as you need to be able to make the pancakes thin and crispy when you bake them. (If it’s too thick add a little almond milk)
  2. Heat up a frying pan with a little coconut oil and scoop in some batter mixture.
  3. Bake your pancakes until golden and slightly crispy on both sides.
  4. When serving top them off with a spoon of coconut yoghurt and sprinkle some rasped coconut and crushed pecans on top.

The Best Neapolitan Pizza in Como

 

I’m totally in love with Italy so it’s no wonder I found myself an Italian boyfriend! I always had a strong connection with the country of passion, love and food. But of course since I actually fell in love with a guy there my connection just became stronger and I now like to visit as often as I can!

I have been spending lots of time in Como and I thought that it wouldn’t be a bad idea to find out where you can have the best vegan pizza in town! Lots of pizza’s and glasses of wine later and I have finally found the perfect spot!

Often the less prettier and old fashion restaurants is where you can eat the best food. One of those places just like that is Pizzeria Da Benito. This pizzeria is hidden away in a small street 5 minutes walking from the centre. When the sun is shining you can sit outside and enjoy a cold glass of wine while you wait for the ultimate pizza.

 

What I love

 

Pizzeria Da Benito makes the best pizza marinara, an ultimate classic.  This pizza has a crispy crust, as you take a bite you can hear the crust break and white flower dust remains on your fingers. The tomato sauce is so rich, you can taste the freshness of each ingredient. And even though there is lots of sauce the bread remains crispy. It has the perfect balance of textures and flavours. You can truly taste the classic Italian flavours that will remind any Italian of their grandmothers food. It’s honest, and purely delicious.

What’s also amazing is the fact that they offer a choice of pizza dough. Instead of normal white dough you can also have a wholegrain, multigrain or kamut base. Making your pizza extra healthy! Healthy, fresh and absolutely delicious! Doesn’t this just sound like a dream?!
